I'm meeting today with the landlord to submit a security deposit as proof of my interest in renting an apartment. We wont be signing the lease today because I don't have the full amount required to sign the lease. I can give her the partial in cash or cashier's check but was wondering what kind of document I should expect to get as proof of payment. This is my first time getting a lease by myself. Please let me know if you have suggestions. Thanks!

Signed receipt as others have described. Best is a bank check vs. cash or personal check, but I'd go with a personal check before cash.
It's too late now, but I would have it detailed if it's a security deposit or a holding deposit and that it's at least partially refundable if you decide not to proceed with signing the lease. Maybe along the lines of it's a "holding deposit" until the lease is signed at which point it will become the security deposit.
You'd also want fixed dates for how long you have to pay the remainder of the deposit and sign the lease, and how long the LL is going to hold the unit for you.
There are numerous threads in this forum from tenants asking for advice because they gave a deposit (uncertain if it's a security or holding) and they decided not to proceed for one reason or another, and then the LL is keeping the deposit.
You want a written receipt with the addess, the rental amount, how much you have paid, and what the money is for. Security deposit? Holding fee?
Is the money refundable and how long do you have to come up with the rent so you can sign the lease? You don't have the money right now and, believe me, they won't hold that apartment for very long if you can't come up with the money.
