I am looking to relocate to Poway, CA within the next 6 months or so.

Depending upon the location of my next job (Program Administrator) I think Poway would be a good location.

The rents are somewhat higher than I am now paying ($1,000 + electric, but am located right on the water)

Any suggestions for affordable 1 bedroom apartments?

Where are you moving from? What is your maximum rental budget?

Have you already checked sites like Apartments.com, Zillow.com, and Craigslist?

If so, which complexes interest you from your search so far?

You'll probably receive better feedback here asking about specific apartment complexes then about complexes in Poway in general, since it's unlikely that anyone here is familiar with all of the complexes in Poway.

However, your best bet is to put boots on the ground: come out for a visit and see what your budget buys in Poway and the San Diego area in person.
