I am new to Google Chrome and i have always liked how you get to zoom in when browsing Internet Explorer. I like to be from 100% to 125%. But each time I open a new tab or I close the browser it goes back to 100%. I would like to know how do I keep my GC from doing that and maintain it at 125%?

To adjust the default zoom settings for all the webpages you visit (global zoom), go to Chrome menu > Settings > Show advanced settings > Web Content. Use Font size to adjust the text size and Page zoom to adjust the size of everything on your webpages, including images and videos.

Generally control and + or control and - should zoom in or zoom out

Only on the current page. The OP specifically mentioned the zoom level changing when they opened a new tab or browser.
