We are considering A Bed and Breakfast there but don't know much about the town other than it's small, beautiful area, and between Galveston and Corpus Christi. Anything, positive or negative or just general information about history, etc. would be a great help.

Are you considering staying at a B&B or buying one/starting one up??
I have a friend that lives there... pretty quiet, not much going on.. but close access to some decent beaches and good fishing. If you like a laid back lifestyle on the coast it is not too bad. People are pretty nice, but the kids there can be a little bit of hell raisers just because of the lack of much to do... lol. A lot of my friends in that area have to drive a long ways to do much of anything...so be prepared for that. Overall, it is not too bad if you do not mind doing a lot of driving for anything. Bay City has some restaurants and such so you would be doing a lot of driving to there.
If you are just visiting a B&B then I would definitely give it a try if you like the coastal laid back way =)

A B&B would probably do better in Rockport/Fulton area closer to Corpus. It is much more scenic and attracts more visitors.

Palacios is a pretty quiet place. Not many visitors except those that already have a boat at the marina they can stay on.

Apparently someone told you it is beautiful. I think that is an exaggeration, but you really need to see it yourself before you make any investments. Some parts of Palacios do have some nice trees, more then many of the small coastal villages. But not as many as Rockport/Fulton.

Yeah Rockport is much more scenic. Palacios is kind of dull and old. It's not a scenic town. That's not necessarily a bad thing, as it is definitely laid back, and there are people such as myself that occasionally enjoy laid back more than anything else.
