Saucing covers poorly cooked meats. I could cook some round steak in the crock pot and smother it in your favorite sauce and I doubt you would notice...

There used to be an old BBQ shack in South Dallas named Carter's. I wonder if there's any relation?

As for sauce, my family comes from East Texas...so it's definitely apart of the 'cue culture. The meat should be able to stand on it's own, but if your sauce is whack, I'm not coming back.
