Great thread topic by the way. And I'd have to think about this one a bit...

Personally, I think the answer lies in -- as several have alluded to -- individual preferences in food styles...of which Texas contains many.

I grew up eating that ole fashioned traditional Texas/Southern/Country cookin'. And I will maintain 'til the day I croak that THAT genre is best ever. Comfort food. JLukes mentioned a place that served such good stuff and I will have to try it. Of course, Down Here it isn't soul food (that is what northerners call it!), it is welllll....just plain down home fare!

As it is, I recall -- when much younger -- one place that used to operate around Wichita Falls. A bit off the beaten path, but they pan-fried the chicken, had fresh okra hand cornmealed, homemade cornbread, catfish was fresh, and black-eyed peas were bought fresh and snapped and boiled with bacon. Greens were hand-shred and boiled up. There was NOTHING from a can.

The operated only during dinner-time hours, as it was kind of an aside for a retired black couple. Sadly they went out of business because the time it took to cook these meals up right, was just not condusive for people who would come in and have to get back to work. That type food takes a while to prepare. And too, ironically, to do it up the old-fashioned simple way was just not really simple in terms of their costs to operate and buy the ingredients.

But anyway, it was -- as I fondly recall -- slap yo' granmaws and momma good! Even though, of course, those pairs would have slapped ME out of the chair in turn...and then gone back into the kitchen and asked if they could help out! LOL

Some fried okra sure sounds good tonight...and just getting the right time to find it!

I know most peope are tired of the same old crappy food they eat in the franchise food restuarants. I wanted to know where I can find some old fashoned dinners no BS microwave food

I just had a mama slappable chopped beef sandwich at the Taylor Cafe. I usually don't like the way some places do them, but this one just had the best flavor I've ever had The potato salad was also some of the best I've ever had, even better than louie meuller's.
