Some of the websites will give you a grid with the prices for all the days in that month. Generally, the flights are the cheapest midweek. Prices also tend to go up as the flight day approaches. Occasionally, there is a bargain at the last minute if there are unsold seats, but that is risky.
I have been told the best time is just after midnight when various holds of non-purchased tickets become invalid (meaning that sometimes cheaper fares become available temporarily).
Sunday nights have always been a good time for me. But it really can vary. Also check on Tuesdays and Wednesdays, which are also the cheapest days to fly.

I would agree with you in principle.
However, I subscribe to Airfarewatchdog.com as they keep me up to date on the latest fare changes.

I had a death in the family and went with the "flexible weekend travel" in my search.
I got a round trip Seattle to Savannah, GA for $636 for 4 days leaving Thurs night... I could have paid $520 for the flight leaving Fri morning but I didn't want to waste an entire Friday traveling.
I also got a Syracuse, NY to Savannah, GA flight for a family member.. $394 round trip.
Both flights are US Airways... For the record Delta had similar prices. At any rate I thought both fares were quite reasonable considering the short notice and there was no bereavement discount.
It's also worth while looking at alternate airports.
Sometimes it can be worth driving a couple of hours for a greatly reduced ticket price. I find this to be particularly true with the New England and NYC/PHL metro airports.
I've read Tuesdays. In reality, it can all be pretty random.
What I just do when I'm planning a vacation is just search +/- 3 days and find the best price. The actual day doesn't vary too often and very rarely do I see prices fluctuate daily. I have however seen prices go way up overnight.
