I was on unemployment from a restaurant due to covid. I started doing online quizzes and making extra money that way and when I certified I claimed it and said I quit. Basically I started a new job without telling my old boss. Making money on the side. How do I even go into this interview? Should I be freaking out that I have to repay everything since January

Freaking out is usually never good. It usually causes you to make mistakes.

So you were on laid off from a restaurant due to covid.
You started doing online quizzes and making money.
You claimed the money you made from the online quizzes when you certified?
You said you quit. Quit what? Quit the restaurant job you were laid off from? Or quit doing online quizzes?
Who did you tell that you quit (whatever it was that you quit)?
Is taking online quizzes considered a new "job?"
Why would you be required to tell your old boss that you are taking online quizzes for money?
