a little late here, since i have been so busy grooming all the doggies that their guardians left to make an appt at the last minute! so after 10 days in a row! phew, i am so relaxing today, and not doing much really expect hanging out with roommate/friend and my kitties!

but.... i know this is late but i saw this last year...
i might make the pie today!! don't usually cook too much, but trying to do more... just seems like not enough time, so i don't have my own personal recipe...

anyway... here it is.

Holidays are depressing for me I plan a green salad, roasted potatoes, green beans (or brocolli, not sure which yet) and a "Field Roast". My dog will get a "Turkey Feast" in a can mixed with his "Blue Buffalo" dry food.

I assume it's this: Field Roast Grain Meat (http://www.fieldroast.com/products.htm - broken link)? I've had their Italian "sausage" and it was pretty good, but haven't tried the other varieties yet.

We had:
Lentil loaf
mashed potatoes
gravy
stuffing (with cranberries and pecans)
homemade peasant rolls
green beans
a cranberry and orange layered jello mold (using agar agar)
pumpkin pie

I'm done with the lentil loaf. It just didn't taste that great. I'm just going to go easy from now on and buy a Tofurky or something like it. The "jello" turned out great, though!

We made reservations for dinner. I had a vegan shephards' pie. Here's the description of it (from Irregardless Cafe menu):

SHEPHERDS’ PIE (Vegan)- Vegetarian casserole layering vegan short crust dough with red bliss mashed potatoes splashed with chopped tomatoes, cucumbers, parsley and bulgur wheat, sliced carrots marinated in pomegranate molasses, sautéed sliced cabbage with onions, celery & fennel seeds and garlic wilted spinach. Baked and served topped with ****ake mushroom miso gravy.

I didn't have a recipe, but I based my estimations for how much agar agar powder to use off of a recipe in the Passionate Vegetarian (Crescent Dragonwagon). I would suggest looking at recipes on Vegweb or other internet recipes because mine was a broad guess! I used appx. 2.5 tsp. agar agar for 2 cups cranberry juice, and 1 Tbsp. for 3 cups of orange juice. I used about the same for the final layer, which was 3 cups cranberry juice again. However, this layer collapsed on me. I added more sugar to this layer, so that could have been it. Or I didn't allow enough time for it to harden.

Besides the issue of how much agar agar to use, this is what I did:

Mix two cups store-bought, sweetened cranberry juice (look for the fruit-juice sweetened one), add appx. 1 Tbsp. sugar and whisked to dissolve. Whisk in appx. 2.5 tsp. agar agar powder (Dragonwagon stresses the powder, not the flakes. I used powder this time, but I have also used the flakes before w/o difficulty...). Heat over medium heat until boiling, stirring once in awhile. Let boil for a couple seconds, then remove from heat. Allow the mixture to cool down and begin to thickens (15-20 minutes). Once it begins to thicken, stir in 2/3 cup chopped, fresh cranberries. Pour this into the mold and refridgerate.

Second layer: Same basic instructions, but use 3 cups orange juice, sugar to taste (I used the syrup from a small can of mandarin oranges to make my 3 cups of liquid, then added about a tablespoon of sugar), and whisk in 1 Tbsp. of agar agar. Stir in a small can of drained mandarin oranges instead of the cranberries. Pour into mold on top of the cranberry layer.

Third layer: 3 cups cranberry juice, about a cup of sugar, 1 Tbsp agar agar. No addition after it cools (but do cool it before pouring it into the mold). Like I said, I'm not sure if the high sugar content is to blame for my collapsing third layer or not. I will know later today when I go to eat some leftovers. The first layer, with only a little bit of sugar tasted great. I added more sugar and left out the fresh cranberries on the 3rd b/c I was trying to mimic the gelled cranberry "sauce" you get in the can. This was the only way my husband really likes cranberry sauce/relish/stuff. Good news is, he seemed to like the first layer just fine. So I would suggest doing the third layer exactly like the first (adding just slightly more sugar due to the increased amount of juice).

It looked really pretty, too.
