From Greece I would choose the city of Florina or Metsovo (a mountainous village in Ioannina) for winter and somewhere in Cyclades island complex in the Aegean Sea at summer. From abroad I would choose somewhere in Sweden or Finland in winter and at a coastal region in Italy or Spain in summer.

If I had to go with some choices(lots of different ones) then here are a few:

Park City, Utah/Queenstown, NZ or Seattle/London from May to October.

San Francisco/San Diego or even Park City, UT/Queenstown, NZ from October until May.
