We'll be having 300-400 people at our wedding and was wondering if anyone can give their input on how many servers we'll need....Also, our caterer is providing the food, soft drinks, etc. What else do we need to have besides servers and table settings?

Did your caterer not advise you on this? They are the best person to ask since they would be bringing the servers. That said when I have done that sized buffets for work the caterer typically brings five to six servers and two drink station attendants/bartenders.
