You planning to invite the same people to all of those and expect gifts at multiple parties?
I predict your list of friends will be shrinking.
If there are multiple bridal showers because, say, your fiancee's work colleagues are throwing her one at work, that's not a big deal. Happens often.
But, if you're going to do a Jack and Jill, why not just do that one and call it a day?
The rest all sounds reasonable enough, if you can afford it. Or... your parents... and grandparents... you're the one letting your folks go into debt to throw you a huge party, right?

When I get married I'll probably only do two bridal showers (a coed one and one with my coworkers), and perhaps an engagement parties. The rehearsal dinner has nothing to do with this though. So the brunch is for the wedding? I'll probably have a breakfast the morning after to open gifts but that would be immediate family likely (as in bride, groom, parents and maybe siblings who are around).

As Idon'tdateyou wrote, the rehearsal dinner, and the after wedding brunch are only the wedding party and immediate family (& perhaps very close out of town guests) and you will not expect to get an extra gift from those events.
Regarding the engagement party and showers. Very few people that I know ever had an engagement party, and the few people who did just had a regular party and announced the engagement at the party so no brought gifts. Perhaps there may be multiple showers, but they would be for different people, such as one for friends and relatives and one strictly for co-workers. So your guests would only attend one shower (at the most) and thus only give one shower gift.
Now, if you were the person who was talking about having a huge fundraiser called a "Jack and Jill", you will have to do what you are comfortable doing and what is expected in your community. Where I live, people would be horrified to learn that someone held a fundraiser to pay for an extravagant wedding, Frankly, they would be less horrified, and more accepting if they learned that the groom sold a kidney on the black market or the bride sold her eggs to pay for an "over the top" wedding. (BTW, I am obviously, joking so don't start looking to sell your organs on the black market to pay for your huge wedding).
There is no need to have all that nonsense going on.
No engagement party is necessary
one bridal shower is plenty unless co workers are going to do one on a lunch hour at work

Every time I see a thread like this I am so much more grateful that we eloped.
You can throw as many parties for yourself as you wish but follow this one rule -- you only invite each person to ONE party of a gift giving kind. Other wise you're being gift grabby.
And I second -- an engagement party is to ANNOUNCE the engagement, and it is not a gift giving event. If everyone already knows about the engagement -- it's not an engagement party.
And the rehearsal dinner is where the bride and groom gift gifts to the attendants, not the other way around.
