Planning a weekend trip to Asheville in mid-November for my girlfriend's birthday. Neither of us have ever been; any recommendations on where to stay or things in particular we should do? We are both craft beer fans and enjoy eating haha. Also both outdoorsy and active types (although it will be mid-november so it most likely will be cold). I think I'd rather spend more money on doing things than the room itself so mid-range hotel prices would be preferred. Any help is greatly appreciated.

You might be interested in these links, very comprehensive on things to do and see, places to stay in Asheville proper.
Great, thanks for that info! I'll browse through those sites!
You might want to consider staying just a bit outside of the city of Avl. In which case, I'd suggest any of the hotels on Long Shoals Road, the part of which runs from Rt. 25 down to I-26. And right there at that exit is also Biltmore Town Square which is very nice to walk around, shop, plenty of restaurants in there etc. (The Hilton in there is pricey.) But you have Hampton Inn, a Quality Inn and others on 146. From there you can be downtown Avl. in about 10 to 15 mins. on I-26 to the north; and exit at Rt. 240.
I would recommend looking into any of the hotels on Tunnel Road, just off of I-40 (exit 55). I've heard good things about the Holiday Inn and I have stayed at the Comfort Inn and Suites. That would put you very close to an entrance to the Blue Ridge Parkway, just a few minutes from downtown, and very close to Highland and Pisgah Breweries (both of which have tasting rooms and often live music).

The quality of the hotels on Tunnel road varies WIDELY. You've got everything from the single-floor single-night motel to a nice group of quiet pricier multi-story hotels just off the road.
Not sure what you consider to be a mid-range price, but you might also want to look into AirBnB website. There are loads of rentals for the Asheville area and to be considerably cheaper than hotels and probably closer to town as well. My husband and I have used that website for accommodations in various cities and liked it so much more than hotels! You can search by map or price range.

I agree with Tunnel Rd. We always stay there and are 2 miles from downtown. Honestly, you can't go wrong with the hotels in Asheville. I suggest going on hotwire.com, which we always do, and get a good hotel for a good rate. We've stayed at the Holiday Inn and Days Inn. Use the extra funds to hang out downtown.
I really have liked the Haywood Park hotel that is in the middle of downtown. Great hotel and great location. Renaissance Hotel is another good option.
