Can't you just list say : Ed.D Candidate to indicate that you are currently in school? That is how I would handle it.
I don't know about Ed.D., but for a Ph.D., you wouldn't say you were a candidate until you finished everything but your dissertation. At least not in the U.S.
When I was a PhD student (didn't finish it,) I also listed the positions of Research Assistant and Teaching Assistant, since that was funding the degree.
For PhD's, some indicate it as PhD(c) - with the "c" indicating "candidate". I'm not sure when that "c" is kosher to use (e.g. When all except dissertation is complete or at anytime or what) and I don't know if it's standard for an Ed.D to do some thing similar.
