If you are thinking about leaving Italy, like many young people did over two or three generations about 100-135 years ago and many young people have done over these past two or three generations, and are looking for a place at least remotely similar to Italy, as you observe, then go for it!
Your youth is too fleeting to waste in a sclerotic country like Italy in slow decline.
Decline which over the past four years or so has accelerated even beyond my most pessimistic expectations formed in the late 1990s, and I have watched it from afar with varying degrees of horror.
However - and I am not an expert on either Australia or New Zealand - I believe that Australia, which also has some areas with Mediterranean-like climate, is a bit more dynamic and offers more opportunities for young people. But, yes, it is uncanny that New Zealand has these "Alps" going in sort of the opposite direction.

Of course if I have to starv..yes.. But then again I would return to Italy..after I got some money-work there.

Well, I don't think Italy will decline to the point of starvation. After all, Barilla, De Cecco, Bertolli et alia still feed me. I think more in terms of dynamic entrepreneurial opportunities for average young people.
But I understand how you feel. And I even admire you for taking up the challenge of Italy's uncertain future.
Italy seems like a great country though. If I was going to live in Europe, it would be on the short list.
My own fair town would be just south of Rome, and does have vineyards and olive orchards, although apples are the big crop. There was an influx of Italian immigrants here in the late 1800's, and the names and faces can still be seen around town.
South of domes begin wines of campania.. Fiano di avellino, Greco di tufo, aglianico (taurasi)
