If it seems like the person is willing to end your life for your car than i would just get out of there and let him take it (just remember to not leave your phone and wallet in the car) and call the cops and just hope that they catch him soon.

I live in a sensible state where I can (and do) keep a loaded pistol within arms reach in my car, so if menaced and fearing a threat to my life, I'll use it.
But in all honesty situational awareness and locked doors will give you an advantage.
