Real honey varieties are awesome. Love the dark forest flower kind, so aromatic and almost spicy.
And it is so neat if the jar has a large piece of the honey comb in it. One bee kepeer I drive by sells the comb in a square plastic container. Eating the honey like that is just so different. And you get to chew on the wax...

I think I saw a recipe for fireweed honey that is a sugar syrup cooked down with the flowers and turn almost into like a thin pancake syrup?

I've been told you can buy locally made fireweed honey at the Wasilla farmers market. Sam the person who told me says its wonderful and has the added benefit of helping folks who suffer hayfever and alergies build a resistance to them.

nice pic... again never thought of eating them.

Fireweed Honey is myyyyyy favorite.

Honey whenever going to a new place or even if in your place will alclimate your system to the pollen around you. Whenever I go to a new place I grab some local honey. Plus it is sooo good for your body - can't say enough about honey - I use it instead of white surgar in most reciepes.

But back to fireweed!! Anyone ate the shoots or leaves????

I haven't, but I have heard others have when they are very young and cook like any other greens or the fiddlehead ferns.

OK, now I'm gonna flash freeze some vacuum sealed fireweed blossoms and see how they are in a couple months.

I keep telling myself I'm going to make some fireweed wine this year and distill some of it into brandy and see what it's like.
