Look in a library or bookstore for information on opening and manageing a resturant. There must be an "Idiot's Guide to Resturanting" out there. The bigginst problem with the resturant business is it is as close to a completely open market as possible in this economy. Thus the competition is brutal.
Zoidberg is correct. It is easy to make a small fortune in the resturant business. Just start with a big one.
Baja Fresh has plenty of competition for that format, with Taco Cabana pretty solidly entrenched with four stores, and Chipotle moving in, probably reaching 4 eventually. Unfortunately, "fresh" doesn't work so well here when almost all the greens have to come in from so far away.
Culver's (according to their website) is not looking at NM as a targeted growth market. After having sampled their fare I can say that they would not have a prayer of succeeding here if they did. New Mexicans like to taste their food. Further, we already have probably more burger chains represented than any other metro area.
We do, however, now have a Freddy's to take on the Culver's fans.
