Missing the chiles... Ship chiles to other states?

Ok, educate me about Hatch chiles. There is a vendor that shows up in my town every year, he roasts them on site. I'm used to jalapenos and other chiles, but I buy them fresh, what the vendor sells is bags of blackened chiles that, well they just don't look real appetizing. Many have a thick waxy yet slimy skin, I tried them a couple times, but I'd rather just grill some jalapenos. So what am I missing?

You freeze them in small bags and thaw, peel off the charred skin (which adds a wonderful smokey flavor) remove stems and seeds under running water, chop and add to almost anything to make it taste better. What did you try them with?
