Not really sure what type of tow rig you are using. If it is just a front end dolly it will take some creative thinking. If plywood just is not going to work, then atleast get something like a padded moving blanket to cover the windshield. It won't stop a big rock, but should work on whatever the truck kicks up.

It is not a dolly, all four tires will be on the trailer. It's the kind UHaul rents.

If you just have to drive in the winter, my call would be to try for early December. You might get lucky and have a mild or late winter, missing any heavy snowfalls. I'm with akck. I wouldn't even mess with driving the highway in the dead of winter with a UHaul from the Lower 48. I'd come up solo, then, retrieve the wife after breakup. Good luck!!
