Merry Christmas does not offend me at all. I have heard and said it to many people. The Intent is good and positive.
Same with a smile and a greeting.

People like to be acknowledged. Sometimes a simple act of saying hello or complimenting a person can brighten their day far above what one may realize. And we do not have to have a season, or a reason, to do that. it can happen any day of the year.

That's right. There's no need to take offense at someone wishing you a Happy Holiday. They don't know if you celebrate Kwanzaa, Solstice, Christmas, Saturnalia, Boxing Day, Fesitvus, or Hanukkah. I try to return the greeting as it is offered.

If I don't know them I say nothing. You are correct, people these days get offended very easily.

The last thing I want in Xmas is to be walking on eggshells, but I get it this is 2019 and not 1959.

Why are any of you even bothering to bite on Julian's bait? All it does is add a sour note to the whole idea of an otherwise friendly greeting, whichever way you say it.

So everyone needs to act in accord with your cultural norms, regardless of their own preferences? Any norm but yours is pointless, meaningless, and a waste of your valuable time?
