Before we scare the OP away and get off track wasn't the original question about a Coffee Shop not a coffee house? There is a difference this brings up his main competition Kens! ?

Ken's (officially known as "Ken's House of Pancakes") is a more of a "diner", instead of a "coffee shop." There are coffee houses, coffee shops, coffee bars, cafes, etc; however, they are all basic variations on a theme and Hilo has quite a few of them for its relatively small population.

Beer. Beer is good. Beer encourages gathering. College students like beer. Tourists like beer. Kama'aina like beer. Beer goes with everything. Beer is good.

Coffee market is pretty well saturated. Even McDonalds sells espresso now. Coffee isn't so special anymore. But there's always room for more beer.

But if you really want to bring in the crowds, sell bacon. Bacon is a huge, untapped market. And there are so many things you can do with bacon. Work up a menu of things made with bacon, hang out a big sign that says *BACON* and just watch the bucks roll in.

And of course, you know what goes really well with bacon? Beer! So there you go. A complete plan.

Oh, and in other news, trying to open any kind of food related business in an area which you are not intimately knowledgeable about is generally considered to be a fast-track to failure. Something to consider.
