My guess on In-N-Out is the popularity is also due to the price and menu simplicity. As far as chain joints go, they tend to be on the lower-priced end of the spectrum. Can still get a burger and fry there for under $6.

Aioli and Mayo are two different things. Aioli is made with olive oil and garlic whereas mayo is made with eggs and canola oil. I'm fine with aioli on hot foods.

Wendy's is able to pull it off as they use outside suppliers for the patties. In-And-Out processes the beef and makes the patties themselves in their own facilities.

I went to one when I was in the Bay area a few weeks ago. I agree, the simple menu, good quality, and fast service makes it popular.

msRB, not sure about mayo but you can get a bunch of different sauces at Chick-fil-A. They don't put the sauces on the chicken sandwich; the sauces come in the little containers like when you get McNuggets at McD.
