That's some pretty serious vacationing! Don't know if a week can do justice. Better to go with something less ambitious.
Tough call to tell some one where should they visit in Canada,thats why i recommended 2 or more trips, to get a mental pic youd want to see the Rockies and other aspects of the west,, then you'd probably want to have some fun in Quebec particularly Montreal and Quebec city, then you'd want to experience the Maritimes with PEI and Nova Scotia highlighting the trip.Then you can say you've been to Canada.
Airfares from Houston to Montreal/Quebec City and from Houston to Calgary/Banff NP are in the same price range. Quebec will be a good start, something different yet sounds familiar.
Not sure I can agree with Niagra Falls. It is one of the most incredible natural wonders of the earth, to be sure- srrounded by side shows that would put Barnumn & Bailly to shame. In a country with some of the most incredible natural wonders on earth -and you can do better, but you'll have to go further afield.
I went to Prince Edward Island this summer and it was one of the most beautiful places I have ever seen. The beaches are amazing and beautiful tho the water isn't all that warm. Aside from Montreal and Quebec I really felt like I was in a different country...the people are so friendly and laid back and you can just drive around for hours and your eyes will never be bored.
I've lived in Canada my entire life and been to every major city. My advice given your background... go to Montreal. It's one of the most unique cities in North America, offers a great vibe infused with soul and culture. Incredible food, entertainment, and stuff to do. Explore Quebec City (it's under a 3 hour drive from Montreal or just take the train). I believe the whole city is classified as a UNESCO world heritage site. It gives you the feeling like your in some fairy tale city told in fiction storybooks. Great feeling.
If your not really a "soul" type of person, and say more of a visual type... fly into Vancouver and explore the surrounding area like Whistler, and maybe rent a car and drive to Calgary. Extremely scenic with the mountains, hot springs, etc.
Whoever thinks that if you've seen one large eastern city like New York, you wouldn't get anything out of seeing Toronto, really doesn't know what they're talking about. Toronto is very unique on this continent. It is a large world city with a unique mix of immigrant groups and it has a very different architecture, pace, and culture than NYC, Chicago, etc. No, Toronto isn't my favorite city in the world, but it is superficial to say otherwise.
I have been to Toronto and I completely agree with this. It's much, much different from Chicago, Cleveland, Detroit, etc.

The Maritimes would be worth visiting, I think. They're pretty distinct, and represent 'old Canada.' Newfoundland is as different as Quebec culturally. The scenery there is beautiful.
