Thank you all for the responses, all of them very helpful. We're planning on visiting towards the end of May once school lets out and spend a few days exploring. Our goal is to visit as many counties and their cities as possible surrounding Meck to get a better idea of current development and commute times.

That's a good idea. If you have the time in the morning, I'd suggest streaming the morning news on WSOC. I prefer their traffic reports.
Your wife's situation makes it a bit difficult to advise you. Usually available acreage is further out than I think you want to be. You're most likely to find it near Kings Mountain, unless money is no object, but I think it's further out than you want to be.

There are actually more 2+ acre lots in Huntersville/Cornelius/Davidson than I thought, but they're not cheap. Looks like 53 active listings in those 3 towns. Least expensive is $150K and only 3 of those under $200K. Only 2 more between $200-$300K, 4 more between $300-$400K, and of course that's just for the lot.

Yeah, for a house on acreage I used to suggest Harrisburg and Kings Mountain, but there's been a lot of building in and near Harrisburg, so I think it might be a bit difficult.
Been researching through Landwatch and Zillow. Search criteria up to $70K and have seen several listings in the surrounding counties of Meck. Might be able to expand our financial reach above $70K, but I'd like to keep that amount as my ceiling. We're wanting to stay put here until our kids are done with HS (<4 years), so I'd like to secure some land now at today's prices rather than several years from now.

I would take information from Zillow with a grain of salt. Zillow has my house and property tied to adjacent property.

Got ya, yeah that will most likely limit you to outside of Mecklenburg, which would probably be a 45+ minute commute to Charlotte. I assume you're familiar with the process, but even those will likely still need well/septic or water/sewer hookups added which can be pricey.
