I've wondered though if something new is planned for the land back there. Everything has been cut down for months and my DH honestly thought he saw signs of building. Some info. Crops are seasonal. Soybeans were harvested late last fall - probably around Thanksgiving. It is now time to start planting the "winter" (spring) crops. Some farmers already have wheat coming up (which might look like a field of bright green grass to you).
This cold snap was not a good thing. We hope the crops were not damaged, or it will mean loss of that crop and starting all over again...$$$$. Crops are rotated, so you won't see the same crop in the spring that you saw last fall. Crops you are most likely to see in this area are grains: wheat, corn, soybeans, etc. Occasionally, you might see cotton.
Union County is a major poultry producer (turkeys, chickens). When you are out in the country and see the long buildings/barns, those are "poultry houses" where young poultry are being fed and raised. You might find it interesting to know that many of the area poultry growers are women - read the names on the signs by the "poultry houses". Tyson has a poultry producing plant in the Wingate area. Some of the "aromas" surrounding the poultry producing areas aren't real pleasant. You are likely to get a "whiff" when you drive by.
