You've got to try McCoys at Old Pineville and Woodlawn....their mac and cheese is perhaps the best I have ever had. It taste like the real thing, and not something out of a box...that has been doctored up. While you are there, have a helping of their green beans (and fried squash)....they always taste like they have just been picked and prepared. If you go there on Tuesday, they have the Potroast Special...its something you won't soon forget.

I keep checking this thread hoping somone will post a recipe. I have made Paula Dean's and that was pretty good.

I know it's not exactly high cuisine, but Cracker Barrel (Independence Blvd just north of Matthews) has pretty good mac and cheese.

Third vote for Mac's Speed Shop (South Blvd.) Also one of the best places to get barbace in Charlotte.

4th vote for Mac's BBQ. There's one on South Tryon as well that is new and one on South Blvd. as well. Good BBQ, good collard greens, great hush puppies.

ok, ok, here's my recipe, sorry it's not totally exact:

1 small onion, or 1/2 large onion, chopped
2-3 Tablespoons butter
1.5 Tablespoons AP flour
1/2 teaspoon salt
1/2 teaspoon pepper (or to taste)
2 cups of milk
2 cups of shredded sharp Cheddar cheese
1/2 cup Panko bread crumbs
1/2 box of macaroni (? I never get my pasta amt. right, so this is a guess.)
Set oven to 375

Melt 2T butter in sauce pan on medium and saute onions until very soft, about 5 mins. Stir in salt and pepper next, then sprinkle flour over the mixture. Incorporate the flour and let cook another minute or two until smooth and bubbly. Remove the pan from the heat and add the milk. Heat to boiling, stirring constantly, and boil for 1 min. Remove from heat again and stir in 1 and 3/4 cups of the cheese until it's melted. Mix w/ al dente macaroni noodles and pour into a buttered 8x8 baking dish.

For the topping: Melt 1T butter in a saute pan and add the Panko crumbs. Saute until golden brown and crispy. Combine w/ remaining 1/4 cup cheese and top the macaroni. Bake until golden brown and bubbly, 20-30 mins.
