Ok, as a recent transplant to Cincy, I have fallen in love with goetta. My personal favorites are Mike's and Eckerleins" at Findlay Market?

So who has the best?

I know this will be hard to hear, but you should make your own. I personally would not eat goetta commercially prepared, and I love goetta. The goetta I make and that I have had at friends and relatives bears no resemblance. Myself and others have posted recipes here for goetta and if you search you will find them. Mine is easy, KJ's is hard. Take your pick, but by all means make some homemade goetta for yourself.

BTW, when I cook goetta, I fry it till its a mixture of crisp and soft, brown and gray. Then it goes on a sandwich, a fried egg on top or just right on the plate.

You may find some in local meat markets which is tolerable. But I agree with Wilson, make your own. I contend it is whether you desire meat-flavored oatmeal (commercial) or meat with oatmeal (home made). The oatmeal is cheap, the meat is not.

The Dorsel Co.'s pinhead (steel cut) oatmeal is the standard for goetta and made in Indiana. You can find it in local Kroger stores and I believe others like Meijer carry it. The Dorsel package has goetta recipes right on it, which are simplified. When I say simplified they start with pre-ground meat. The one step I may disagree with is that when you cook the oats, even in a crockpot on low, there better be some stirring or they can still stick. I would also considerably decrease the salt as we do not need that in our diet since we have too much and increase the black pepper (try restaurant grade coarse ground).

Just last week I took the last loaf pan out of the freezer of my traditional recipe homemade goetta I prepared a double batch of last Christmas. It doesn't usually last this long, but the last pan got hidden in the freezer. I will agree with Wilson my traditional recipe, which has been posted a couple of times in this forum, is hard, and very time consuming. For the result I will put it up against just about anyone's, but it is an entire day's work.

As I absolutely love goetta I admittedly must try some of the less demanding recipes because I am getting too old to be standing in the kitchen all day long and then having to clean up the multiple pans and utensils I have used. But please, do not use Quaker Instant Oats, that is just plain sacrilege.

Well, the thing with Findlay Market's goetta is most of the vendors make it themselves using old family recipes. I haven't tried Glier's yet but will have to so I can see if I dig it.

Until you make your own you will never know the difference. As Wilson would say, it is like a JTM burger against a real one. If you like soy filler in place of real meat - fine. If you just love fried oatmeal - fine. But if you would like some real goetta either make your own or find a friend who does. Glier's is better than nothing, unless you have had the real thing.

Had Glier's for breakfast this morning at the Echo in HP Square before going to Opening Day and loved every morsel!

So much of the homemade goetta I have had is a lot worse than Gliers. It is more often made with ingredients so far from its original purpose - using up the offal and other meat from the butchering process.

Unless you are butchering your own hogs, you are probably not getting an authentic product.
