I was just at Copley a few times last week and have been to Rittenhouse recently also. I'm going to say it's a tie. Both were packed with people and shopping is everywhere around both. Rittenhouse beats Copley as far as the park is concerned, in my opinion.
I can't vote because I haven't been to Rittenhouse, but have heard amazing things. I worked in Copley Square for three years and can testify to it being one of the most beautiful areas of any city I've ever been to. The area is bustling and surrounded by some of the nicest areas of the entire city (though I've heard the same about Rittenhouse).
Though I admitted I've never been to Rittenhouse Square, I think it would be difficult for it to say it has the better architecture seeing as there are four architectural landmarks surrounding Copley in the form of Trinity Church, Boston Public Library, the Fairmont Copley, and John Hancock Tower.
I'd also go with Rittenhouse Square. It's a better public space. I think the streetscape surrounding Copley is slightly more aesthetically pleasing (though the JHT isn't great at street level), but as a park, Rittenhouse is nicer. Both are very active public spaces.

In Rittenhouse Square, the streets are tighter than around Copley Square and there are more tall buildings surrounding it, so you feel a little bit more enclosed and surrounded by the big city.

Looking at pictures (haven't been to Rittenhouse) it looks like what's around Copley Square (ie the Old South Church, Copley Library, Trinity Church, and JHT) are all nicer than what surrounds Rittenhouse, but in terms of the squares themselves, Rittenhouse blows Copley away.
Though I'm not sure if this is comparing apples to apples. Rittenhouse seems a lot bigger and a lot more parkier than Copley. It also seems to be more in the heart of the city, whereas Copley Square is in the Back Bay.
It almost seems more like the public garden or the common...

Agreed! Except Post Office Square seems to be surrounded by all office buildings where Rittenhouse is surrounded by all residential buildings and one hotel.
