Yea, it's great. I just miss North Carolina BBQ lol. I'm not as crazy about the Texas or Memphis style.

I don't know any KC residents, sadly. I'll have to visit one day.

Agree..Carolina emphasizes pork whereas TX is about beef. I barely scratched the surface with some amazing smoked ribs in Charleston SC, BBQ not that city’s specialty, at a top restaurant, also not known for BBQ, and can only imagine how good BBQ must be elsewhere in the Carolinas where it is their specialty.

Its unique. I think the vinegar does it for me. Its been years since I've had it, but its up there with other popular local cuisines. It seems like every small town has it, and the quality never changes.

Carolina barbecue sauce comes in three distinct varieties.

The pure vinegar-based sauce, which I've also become a fan of, is native to eastern North Carolina.

Western (or "Lexington-style," after the epicenter of Western Carolina Q) North Carolina sauce combines tomatoes and vinegar, plus pepper flakes and/or sugar and in some cases butter.

In South Carolina, the best Q places use a mustard-based sauce.

Ah . I believe it was Eastern. I had family in Durham . But even the rural areas had great stuff. Western sounds amazing.

I think of these in two different ways. What are my favorite cities to eat specific things and what are the best overall food cities across multiple categories.

For specific foods, my favorite food cities are:
Memphis: BBQ
New Orleans: French inspired fine dining with Creole flair
Quebec City: French inspired fine dining with Canadian flair
Charleston: Southern Fine Dining
Chicago: Pizza, Vienna Beef, and Eastern European Cuisine
Santa Fe: New Mexican food
Tucson/Phoenix: Sonoran Mexican cuisine
Austin and Portland: Fusion
San Antonio: Tex-Mex

For overall food scene (ethnic diversity, fine dining, regional cuisine, cheap eats, etc.), I think the top four are:
NYC
Chicago
LA
SF

Then you have a group of cities that also excel in every category:
Houston
Seattle
Boston
Philadelphia

Then another group that are also excellent
Miami
San Diego
Dallas
Atlanta
DC
Detroit

Again this is just my opinion but I think its relatively educated. Based on that, my favorite food city in the US is Chicago.
