The biggest and tallest hotel in Texas is the Sheraton Dallas Hotel with 1,840 rooms. The complex has 3 towers Center tower 42 stories (550 ft), South tower 31 stories (448 ft) and the North tower 28 stories (353 ft).
I believe the tallest/biggest hotel in Houston is the Hyatt Regency downtown but that might've changed since the Hilton Americas was built. I know a new Embassy Suites hotel is under construction but I don't know if this'll compete with the other two as far as size is concerned...
I think the tallest in Charlotte and NC is the Westin, only 700 rooms so we are pretty much dwarfed by everybody else.

Not too tall, but one of my favorite buildings in Charlotte, I love the architecture.
