I don't think there is anything remotely like a Publix in that area. Have you ever been to Beaufort? There is a hospital in Morehead City (which might as well be the same "city" as Beaufort; only a bridge separates them) but it's on the far end, so maybe more like 20 minutes.
We can't really tell you whether you "belong" in Beaufort--only you can do that after having visited and assessing how it meets your own needs. If a fancy grocery store is a big criteria for you, you will get very tired of the offerings in that area.
Also, realize it's a big touristy area and will be crowded/traffic everywhere from Memorial Day to Labor Day.
Actually, as I pointed out upthread, there is a Harris Teeter in Morehead City, very comparable. And I pointed out that the area is touristy and crowded in the summer. I usually tend to agree with most of your posts, but you are turning into a grouchy uncle who is contributing very little these days.
Thank you everyone, for your replies. The hospital in Morehead sounds fine, if it's only 20 minutes. I just don't want to be an hour from a hospital if I have something horrible happen. Planned surgeries, doctor visits, those things can be planned and I don't mind traveling a bit. But need a hospital nearby in case I need an ER.
I wouldn't call Publix fancy, but someone said there is a Harris Teeter in Morehead, which is fine. I have been to Harris Teeters before and they are very nice. I would consider The Fresh Market or Whole Foods more 'fancy' than Publix.
The Hospital in Morehead City is called Carteret General Hospital. They are not very high tech. For serious procedures or incidents they often transfer the patients to Greenville NC. There is a big medical school and provider network up there.

I checked out their website and they do chemo there, etc. It seemed like an okay hospital, but you would know more about it than me. I just don't want to have to be transported 2 hours after I have had a stroke or something. I want to know I can go to an ER in the middle of the night if I am having pain, etc.

I should point out that the main disadvantage we see living on the coast is a shortage of specialty doctors. There are plenty of family practice doctors, but very few Internal Medicine doctors for adult care.
If you would need an endocrinologist, cardiologist, dermatologist etc. , please check their availablity in Beaufort. You might have to go to Jacksonville or Greenville to see one, and even then the choices are limited.

Beaufort is a town of only about 4500 people. So, on ENC Craigslist I counted 16 listings for rentals in Beaufort. The low price was an apartment for only $600/month, and the high was a house at $2500/month. Most were owned by individuals rather than complexes.
That's not a bad number of available units, considering it is a coastal resort area and a very small town.

Yes, that is encouraging. I was looking on rent.com and the other apartment sites. A private rental might be harder because I have three cats. Most apartments allow 2, so I could probably sneak the other one in at some point, since they are all the same color.
But maybe I will get lucky and find a pet-loving private rental. If things worked out, I would eventually buy something, but not until I had been at the job at least a few months.
