Are Moe's and Salsarita's in Lexington considered TexMex? I know Moe's says it is "southwest grill." I don't really care for Mexican, so I've never been to these places.

I don't know of any "authentic" Mexican restaurants in Columbia. Monterrey/San Jose/El Chico/etc is what I'd consider "Tex Mex".
If anyone knows of one, I'd be interested to hear of it. After relocating from San Antonio, I'll definitely be missing the Mexican food.
There is one on Percival road called Latinos. Authentic as Mexican we ate in Mexico. We also have several Taco trucks in town that make awesome authentic Mexican food. Decker and Percival are two locations that come to mind.

Thanks! I'll check it out next time I'm in town.
