Just remember, if you're wanting a "pastrami special" which has swiss cheese on it, you can't get it at a kosher deli. They won't put meat and dairy on the same sandwich.

Personally, I just make mine. I buy the pastrami sliced just a touch on the thin side, not too thin or it crisps too stiffly. I get it at the Big Y deli, and make the whole sandwich on a frying pan on the stovetop (after toasting the rye bread of course). I put the pile of meat on the pan, let that sizzle, flip it over. Add a slice of swiss, then add a tablespoon of water to the outside edge of the pan and cover it a few second. That lets the steam melt the cheese pretty quickly. Soon as that's done I lift the meat/cheese, slide a pat of butter on the pan, cover the pat with one slice of toasted rye. Lower the meat/cheese back down onto the bread, cover with a slice of onion and the other piece of toasted rye. Flip the whole thing over, let it sit a second, then cut in half and eat.
