Making the move to Fairfield County and have settled on these two towns. Mid 30s, looking to raise family. Is there a big difference between the two? Culture/demographic wise especially?

Culturally and demographically identical.
The only difference is Darien is on the Sound. Easy access to town beach, clubs, and the aquatic lifestye. That puts it over the top for me, for you it may not matter. YMMV. New Canaan is landlocked.

This. NC is also slightly more woodsy.

Default Difference between Darien and New Canaan?

Darien has a beach and better commute to Manhattan. Otherwise, they are identical as far as I can tell.

Darien has better commute. Coastal. Denser. Smidge more expensive.

New Canaan has a more picturesque center and bigger lots. Train less frequent and longer, but you get a good seat in AM.

That’s about it.

Publics are for the rank and file personnel in town. The top honchos go elite privates and boarding.

Darien is denser, has a beach, and has main line access. Darien is a slightly bigger town (21K vs. 20K) and a bit more connected with Stamford/Norwalk. Prices are about the same but you'll probably get more land in NC. They're also both extremely wealthy. New Canaan is probably the richest town in Fairfield County, and possibly the state of Connecticut, that doesn't have a coast.
