Baxter finally has a Mexican restaurant. Azteca Mexican Grill had its grand opening today. Located next to Pizza Hut in Baxter (Hwy 70), the owner, Dora Pacheco, said her goal is “To have my customers happy, grow, be able to help my community, and my Hispanic community too." I can't find a web presence for them. Ms. Pacheco said they don't have a liquor license yet, so I assume that means only virgin margaritas for now.

The multi-cultural culinary landscape in Cookeville is expanding to include a Hawaiian poke (or poké--rhymnes with "okay") place. The former Gondola restaurant is becoming Toki Ramen and Poke Bowl and is owned by the same people who own the wonderful Crêpe and Crème by TTU campus. They're having a soft opening today.

So what is poke?

Poke means “to slice or cut” in Hawaiian and refers to chunks of raw, marinated fish — usually tuna — which is then tossed over rice and topped with vegetables and umami-packed sauces.

“It’s the next generation of sushi,” says chef Dakota Weiss of Sweetfin Poké in L.A. “But easier to eat.”

They've got "ramen" in their name so I'll be curious to see if they actually have that on the menu. I ate at one of those fancy ramen places in The Gulch in Nashville a couple years ago. It actually had real chicken in it, but wasn't worth the $20 I spent for the meal.

Another smoothie and juice bar has opened, this one in Baxter. I can't keep track of how many smoothie/juice bars there are now around here.

Crawdaddy's had a teaser on their Facebook page about their reopening date being "close." While they didn't give a specific date, they did announce that they're going to start interviewing next week to hire cooks, servers, bartenders, hosts, and dishwashers. While it's been fun exploring some of the dozen or so other restaurants in the WestSide area of downtown, Crawdaddy's fire left a huge gap in the downtown Cookeville food scene. I can't wait for them to reopen and, based on the comments on their FB page, neither can hundreds of other people. I have friends in Nashville who would regularly drive to Cookeville just to eat on the Crawdaddy's patio and stroll around downtown.

This is good news. I have to admit, I was walking on West Broad last weekend and when I got to Crawdaddy's, I just had to peak in the window. It looked like they weren't even close to reopening.

Mayor Shelton announced on his Facebook page that Moe's Southwest Grill is going to locate in the former Long John Silver's on Jefferson. They're targeting a spring opening.

Now we just need a Culver's in Cookeville, and we may never eat at home again!
