Tons of malls around.

Grapevine Mills (http://www.grapevinemills.com/index2.html - broken link) - Outlet shops and restaurants in Grapevine
Shops at Willow Bend - Upscale shops (and Apple! 1 of 3 in North Texas) in Plano
Stonebriar - Like Willow Bend, but with slightly different stores in Frisco
The Galleria - Used to be the penultimate mall, but I'd list it after Willow Bend and Stonebriar, personally. Located in Dallas
Hulen Mall - Decent mall in Fort Worth, but losing out to the Parks Mall nearby. Location for scenes from Logan's Run.
Highland Park Village - National Historic Landmark (2nd shopping mall built in the US) with upscale specialty shops. It's all outside, though.

Here are some good resources for both Dallas and Ft. Worth to look over before visiting that may give you some ideas.

One thing I'd suggest that'd be a short distance for a fun day trip would be to go to Grapevine, ride the old railroad to the Ft. Worth Stockyards and spend some time there and then ride it back.

Galleria and Stonebriar both have ice rinks. Stonebriar has a rock-climbing wall. Galleria tends to have more upscale shops (though there are some "regular" ones too); stonebriar is just huge, has a big theater too. Both have a Nordstrom, which is always nice.

If your heart is set on driving up to OK, you could see the Arbuckle Mountains off I-35...some decent view sites, but if you're used to hills/mountains it won't be particularly noteworthy.

Take 75 up into the Lake Texoma area and there are likewise some decent vistas, although at least as many on the TX side. It's a good skiing lake, though.

But from a time consumption standpoint, it's probably better to stay in and around D/FW to get the most out of your time.
