...in the Denver area that you'd like to recommend? Specifically, are there any in or near Parker? Moving in a month and looking forward to trying new veg places in our new hometown.

I like Water Course in Denver Watercourse Foods

I've never been to Parker (not really sure where it is) so I have no clue what would be there for vegetarian restaurants.

Uh-oh, did I just rent a place not near any other vegetarians? I was afraid of that. I did notice a lot of steakhouses near our apartment...

I am so used to living in the city that I guess I assume that there will be lots of variety. Am I wrong to think that of Parker?

Check out Boulder..too many to list. While I am not a vegetarian myself I often dine with friends who are. Today I am heading to Natural Dining and Slow Foods Restaurant Serving Locally Grown Food - Adams Mountain Cafe in Manitou for a late lunch with a friend which is slowly becoming a favorite little place of mine. It's a long drive from Parker, but I think you will find it decent. The menu generally caters to the vegan/vegetarian but I can still enjoy some dead bird. I also agree with above poster..Watercourse is pretty solid.

I know it's some southern suburb, but I can't comment on what's there. I didn't have a negative impression of Parker until I saw a story on the news this morning where a lesbian couple had "Die Gays" painted on their garage door and a noose left on their front porch.

I think you'll be fine in Parker, but if you were looking for urban/city life, Parker isn't it.
