Breakfast at Snooze Replace with Steuben Food Service. . .Snooze is long lines, but chain atmosphere
Rafting + Ziplining at AVA
Drive to Mount Evans around 5 PM from Idaho Springs. Catch the late evening at the summit.
Eat at the Cherry Cricket at night
Little Man Ice cream

Sunday:

Eat at Jack N Grill for breakfast
RMNP in a day (online itinerary) from 9 AM - 5 PM
(Drive Trail Ridge Road since it is now open)
Buckhorn Exchange for dinner Replace with Euclid hall. . .Denver food is anchored in Beer, you can't do better than that. Denver is a BEER city, not a steak one.. .
D-bar Dessert you could eat here too, its good for dinner

Monday:

Head to the Red Rocks area in the morning;
back to Denver in the afternoon to browse and explore the downtown area/attractions. Can I walk around from a central location to a few attractions?blake street/breck brewing/great divide/16th street mall are all walkable


Other considerations: Wits End Brewing; Biker Jim's Restaurant, Rioja (amazing amazing amazing), Garden of the Gods (1.5hrs south), Boulder and Avery brewing and Boulder downtown mall.

Keep your eye on the gauge. It has dropped a bit with the cool weather this week, but it is supposed to hit 80 in town on Friday so the water should come up for you on Saturday. USGS Current Conditions for USGS 06719505 CLEAR CREEK AT GOLDEN, CO

I'll second Chris's suggestion on Biker Jim’s. The caribou dog with the grilled onions and cream cheese is to die for. The fried mac & cheese is great, and the condiments are pretty tasty, too.

I also like Jack N Grill for breakfast. If you’ve got the 7 lb burrito in mind, I suggest you either bring a huge appetite or expect leftovers. Hubby and I have attempted it multiple times with no luck. It’s good, but they serve it on massive platters so it’s a lot of food.

We went to Rioja while we were just in town thanks to the suggestion in this thread. Very, very good restaurant with unique dishes. We really enjoyed it.

We tried to go to Snooze, but as was mentioned, the line was ridiculously long. An hour and a half wait for breakfast?! PASS. Who waits that long to eat at a restaurant? Crazy.

Tried Syrup instead, which was just kind of meh. It wasn't bad, but I can't really see myself going back there again once in the area.

yeah, that is why I avoid Snooze. Juice != squeeze


so many good options (Gaia, Creole Cafe, Steubans, Root Down (with reservation), etc)

I prefer a solid diner breakfast over the new fancy brunch places. Which is why this article "Why I Hate Brunch" hit the nail on the head for me a few years back too:
