Apologies if this has already been discussed.

I recently took a day long Diabetes education class and one of the nurses discussed counting carbs and of course other diet related info. Did I understand correctly that carbs is the big thing to watch out for VS the amount of sugar? Say a dish has 30 carbs with 10g of sugar this is better than something with 60 g of carbs with 2g of sugar?

Yes. The carbon count includes the sugar - look at a label. Just worry about low carbs and your total for the day.

What's the Difference Between Simple and Complex Carbohydrates?

Simple sugars are digested more quickly and raise the blood sugar faster. That's why complex carbs are better.
