A traditional neopolitan pizza doesn't have a lot of cheese. The Neopolitan Marinara (one of the only three "official" Neopolitan pizzas) consists of the crust, fresh sliced tomato, garlic, a drizzle of olive oil, and a sprinkle of oregano. No cheese at all, no extra toppings and, if yeast is considered acceptable vegan fare, the entire pizza is vegan.
