Chicory can have a bitter taste so most beverages containing it are mixed with something else. Another vote for tea here. You can find ones that have as much caffeine as coffee if that's a concern. Also certain brands (Teeccino and others) claim to taste very much like coffee.
I'd also like to know what is bad about coffee processing. If it's the roasting process, you can DIY with a roaster and unroasted beans. If it's how it is grown (pesticides and such), there are organic coffees available.

What exactly about the processing is a no-go for you? Just so that we can be sure that suggestions for alternatives don't run into the same issues.

Yeah that's pretty weird. Coffee beans are roasted. Once roasted, they're ready to grind and brew. There's nothing more to it. Nothing is added to the beans during the roasting process, other than heat.
Try powdered dandelion. It has a very earthy taste and looks a lot like a weak coffee.
