Gluten are these little needles that gets stuck in your gut which causes a leaky gut for some people but once it makes it to your arteries it will cause all kinds of joint and muscular pains. By getting rid of wheat in your diet eventually the gluten will be gone and your pain will slowly heal. So it's important to stop eating grains that are high in gluten. I would even go far and avoid eating fruits and vegetables that contains lectins. Lectins are in the peels of fruits and skin of vegetables. They also cause inflammation because lectins are toxins.
As always you go overboard and villainize a certain compound without providing any scientific facts.

The fact is that for those who don’t suffer from Celiac Disease, gluten seems to have a small impact on gut permeability. However, the rise in gut permeability may not be very significant for normal, healthy individuals. Additionally, this relationship with gut permeability has yet to be proven with in vivo clinical trials. Therefore, those with healthy and robust immune systems are probably safe to eat gluten in moderation.

Lard is fat. Fat is an essential nutrient.

You need animal fat to make good cholesterol to protect your cardiovascular system. I love lard, ghee, and coconut oil. That's why bacon grease is so good.

Anecdotal - my sister-in-law eliminated nightshade vegetables from her diet and her inflammatory issues disappeared. YMMV
