The other reason why I opened this thread up was because of my own observational evidence, combining a low(er) carb regiment with skipping DINNER. I used to be a breakfast skipper, but when I stumbled upon the variations of insulin in a couple of studies suggesting that you may be less calorie efficient in the evening, I thought about changing things up.
I skip both breakfast and dinner, but I'm not OMAD. I eat brunch when I get around to it, then a light lunch then a light dinner around 4. But I'm not sure it can be called dinner at that early hour.
The biggest problem I have with that is trying to decide when to take meds that are Rxed for one with each meal, 3X per day. I always thought that was to spread them out, but when you eat everything within a 7 hour window, they're kinda bunched together.

Ask the pharmacist or look it up to see the reason why the meds should be taken with meals. I mention that because the reasons they give, may not apply to you. One of the meds I take is Metformin which is a common diabetes drug. The reason they give as to why it should be taken with meals is "Metformin should be taken with meals to help reduce stomach or bowel side effects that may occur during the first few weeks of treatment". I've been taking it for over a decade on an empty stomach with no ill effects. They may tell you that as a precaution but it may be entirely safe.
I skip lunch. I try to match IF theory with complementing optimal circadian rhythms, so I try to eat breakfast before 10 and dinner before dark, usually 5-7. I don't snack, never hungry unless I eat grains, then the cravings for more start.
I get outside every morning before I eat, get some sunshine and let my brain know it's morning. I sleep like a baby, 8-9 hours every night.

Interesting. This is what I was alluding to I think. Eating between 5-7 is still during the rhythm's spike though right?

From everything I've read, you want to eat during daylight, so winter months you probably need to eat closer to 5. And it's critical to get sunshine and eat breakfast to trigger the correct hormone releases.
I'm not really IF, but I prefer breakfast, usually around 9:00, and skip lunch (or just a small snack, and early dinner, although some days as late as 7:00.
