Yeah, once you start to take a more natural view towards life, you appreciate the great diversity and benefits of all the natural food on the planet. I still don't like some things, of course, but I've never felt more better than when I started eating balanced meals, stopped smoking, and stopped drinking soda etc.
It did take me a while to eat veggies and fruits. Now, I MAKE myself eat a fruit and vegetable 2 times a day (sometimes 3). One in the morning with my breakfast and one when I eat lunch (and lots of veggies during dinner, most times).
But some I still can't stand (like grapefruit and the skin on apples. I'm always peeling the skin off apples before I eat them).
I love the roasted vegetables I put them in the oven heated to 450 and it takes about 20 minutes. To me with some crunch still left in them they can take the place of potato chips. I like to use small potatoes, green peppers, broccoli, squash, onions, cauliflower, celery, zucchini. I sprinkle with salt and pepper, olive oil. When they come out you could sprinkle parmesan cheese on them.
If your problem is related to some childhood experiences I would guess they were vegetables that were cooked to death. The roasting makes for a completely different experience.
I can't eat cooked spinach or Broccoli, the smell makes me sick. I eat them raw mixed in a blender with O.J. or carrot juice or any number of other liquids. I eat 3 cups of baby spinach in about 30 seconds after it is blended into something else, it tastes good too. I eat 5-6 servings of veggies a day, I don't count tomatoes or corn as vegetables, I count tomatoes as a fruit and corn as a grain.
