The video wouldn't have shown what you insist it would have shown. Video of election operations from 30 feet or more away doesn't qualify as "election records".
There's only so much disk space on servers, and there's no reason not to delete the video after a proscribed amount of time.
The exact same information that you claim was lost when the video was deleted can be found in both the certified ballot tally and in the update of the voter registration records. These records are updated from the ballot envelopes, showing which voters participated in the 2020 election. This information is recorded in the voter registration records so that voter registrations for those who don't vote in several failed elections can be considered for de-registration.
If your key question was "why was the video erased if there was a controversy" - it's been answered. As for the "controversy", such a claim is based upon at best a false premise.
