I looked up the trains available, and since it is a long ride, I was looking for recommendations. It will be June of this year.

You can go via Eurostar to Paris Gare du Nord, then transfer to Gare du Lyon for Perpignan.
I went from Paris Gare d'Austerlitz to Limoges, which is north of Perpignan, so not sure if Austerlitz also serves Perpignan.
