You can check out the Mayo clinic website. They have modified recipes to make them healthier for you. I tried their potato cheese soup-it was thick, creamy, decadent with half the calories and fat of regular potato cheese soup.
I've read that you need the fat in the salad dressing because otherwise it is more difficult for your body to absorb the vitamins in the salad. I don't know why exactly but you can Google it and find out.

I don't like to use Ranch due to the MSG. I think someone has already posted this, but if I do use Ranch, I use Newman's Own (Paul Newman). His is the only Ranch dressing I can find without the MSG.

Yes, I've read and believe something similar Topaz. That there are good fats and bad fats and that the human body needs good fats. Obviously huge amounts of even good fats is not good, but there is an accepted daily serving required for good nutrition and absorption.

The tastiest salad dressing I've ever had is organic extra virgin olive oil. Just a touch. The flavor is exquisite, so you don't need much.
