My first thought is a spicy rice dish, depending on how you fixed the shrimp. Then add a grilled veggie of some sort and top it off with a good wine and dessert!
There are so many ways to prepare shrimp! But generally speaking, I'd do the shrimp and a starch, as well as a veggie. We don't like pasta, so we have usually have ours with rice, but of course it's all personal preference. We often grill our shrimp on skewers after marinating them in garlic, butter and olive oil. Other times we like them sauteed like a "scampi" over rice, and sometimes we do shrimp cocktail as an appetizer. It really all depends on what your dh prefers.
How about a nice orzo salad with some chopped veggies in it and a couple tablespoons of capers? Vinaigrette dressing instead of creamy.
