I have used a dollop of plain yogurt to top a hit, spicy dish like chili. It tasted fine to me.

I've used plain, full-fat yogurt in place of half the sour cream in many recipes, mainly dips and appetizers. They were all very good.
Yogurt and sour cream are not "interchangeable" in the sense that that no one will notice any difference between the one and the other, but they are indeed good substitutes for each other in many uses. Of course, you can't really substitute non-fat, sweetened yogurt for plain sour cream--those two are almost nothing alike.
Did you just take a tentative little taste of the sour cream itself and say, "Ewww!" or did you take a full bite of the potato with the butter and sour cream and pepper together?
I recommend it. You might change your tune.
It was just a taste. But enough to know I would not like it.
Basically I was asking why something sour would taste good. After all, nobody like sour milk. Or I hope they don't!
I make sour cream pancakes. A German recipe from my oma. You have to put a plate over the finished stack while you do the next batch or they will float away!
Hint: if you don't like sour cream, soften a bit of cream cheese on a plate in your microwave and stir it with a fork.
It has a similar texture to sour cream and very tasty.
I add it to cream soups instead of sour cream. The lower fat cream cheese works just fine if you are watching calories.
It also makes a great chip dip (heat, add a bit of milk, dry onion soup mix or dry Ranch dip seasoning to taste and chill)
Stir a little into left over rice for a quick snack.
